With a Bachelor of Health Science (majoring in Nutritional Medicine at Endeavour College of Natural Health), Lola Berry knows what she’s talking about. Spicy Coconut Shrimp

This is a fun dish, easy to make, light and full of flavor its an awesome meal for an Aussie summer barbecue. Im not a beer drinker but I reckon these shrimp would go down a treat on a hot afternoon with a cold beer with fresh lime. From a health perspective, shrimp will give you a fantastic hit of protein and good fats, while they say that cilantro is one of Mother Natures best binding agents, helping to bind with heavy metals and take them from the body. Cilantro is also an excellent digestive stimulant, so your tummy will thank you for it.

Spicy Beef Lettuce Cups with Quirky Carrot Salad

This is another favorite of mine because it has plenty of peppery heat, because its unusual and I reckon its good to mix things up and try something different. I like the spicy beef in the lettuce cups and the salad looks lovely with the bright orange carrots and red pomegranate seeds. Healthwise, its packed with vitamins. Whats not to love?

Avocado Salad Cups

When I moved a year ago, I had lots of "food adventures" where I would take myself out for lunch and brekkie at all these health spots in my new neighborhood. I was like a kid in a candy shop. One day I visited a caf in Bondi after a yoga class and the owner, Pete, handed me one of these it was like a guacamole salad in an avocado cup and it was awesome! So this is my take on an avocado cup.

I love spices, so when I see or hear the words "pumpkin pie" my eyes light up! Id never had pumpkin pie as breakfast before, so I thought "why cant it be more than just a sometimes food?" I wanted to make it healthy enough to have every single morning if I wanted. To all the pumpkin pie nerds out there, this one is for you.

Acai Bowl with Berries, Banana, Granola, and Raw Honey

I tasted my first ever acai bowl in Hawaii. Acai is a small berry from the Amazon jungle and its a super source of antioxidants. An acai bowl is like a really thick purple smoothie so thick you eat it with a spoon. Its topped with fresh seasonal fruit, granola and raw honey. Ive probably tasted every acai bowl on the island of Oahu! My favorite was from a little place on the north shore, where they make something called Haleiwa bowls, which have every fruit topping you could imagine, and theyve inspired my version.

Crunchy Paleo Granola

Its no secret that Im a mega sweet tooth, and granola is something Ive always loved, though I do think of it as more of a treat. It reminds me so much of America whenever Id land in the States, I would head straight to Whole Foods and buy a box of cinnamon and raisin granola and a carton of almond milk and Id be set. Ahh ... the simple things. Even though that Whole Foods granola is pretty healthy and super delish, if Im honest, I know a fair bit of sugar has been added to make it so tasty. This granola has passed all the flavor tests with me and my Dad hes the best recipe tester because hell always tell me when I havent quite got it right. The best bit about this recipe is that its super versatile you can have it fresh with almond milk and banana, or spike it with spices, and sometimes I just carry it around in a little jar and snack on it throughout the day.
