Ingredients

  • 16 cherry tomatoes, or 4 red ripe tomatoes, finely chopped
  • ¼ cucumber, deseeded and finely chopped
  • 2 garlic cloves, peeled and crushed
  • ½ small red onion, peeled and finely chopped
  • 1-2 tbsp lemon or lime juice
  • 1-2 tbsp chopped mint
  • Salt and freshly ground black pepper

Instructions

  1. Mix all the ingredients in a bowl and season to taste.
