This streusel is good for baking on top of pies or coffee cakes, providing sweetness and crunch. It is the topping for Flag-Raising Apple Pie

Working the streusel with your fingertips gives the best consistency.

Streusel keeps and freezes beautifully. Use the amount needed and keep the remaining portion in a container in the refrigerator or freezer.

Ingredients

  • ½ cup (100 grams) light brown sugar, packed
  • ½ cup (100 grams) granulated sugar
  • 1 cup (140 grams) unsifted all purpose flour
  • 4 ounces (1 stick) unsalted butter, room temperature

Instructions

  1. Combine the sugars in a small bowl with your fingertips, breaking up any lumps. Add the flour and mix to combine.

  2. Cut the butter into 8 pieces and scatter them over surface. Work the butter in with your fingertips until the mixture resembles coarse crumbs.

  3. Storing the Streusel: Refrigerate it in an airtight container for up to 1 week or freeze for up to 1 month.
