Snapper Filets in Tomato Sauce

Baking is one of the easiest ways to prepare fish. Here the snapper simmers in the oven cloaked in a seasoned tomato sauce and topped with cheese. Serve with Onion Rice.

  • 1½ to 2 pounds snapper fillets
  • Salt and freshly ground pepper to taste
  • 1 tablespoon vegetable oil
  • ½ cup chopped yellow onion
  • 1 garlic clove, minced
  • 1 can (8 ounces) tomato sauce
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried basil
  • 1 cup grated mozzarella cheese


  1. Preheat oven to 400°F. Place fillets in a lightly sprayed or oiled 8-by-10-inch glass baking dish. Season generously with salt and pepper. In a medium skillet over medium heat, warm oil. Add onion and garlic and sauté until tender, about 5 minutes. Add tomato sauce, oregano, and basil and simmer 1 to 2 minutes. Pour sauce over the fish and sprinkle with cheese. Bake, uncovered, until fish flakes when tested with a fork, about 20 minutes.
