Ingredients
- 1 1/2 cups granulated sugar (375 mL)
- 1/4 tsp cream of tartar (1 mL)
- 1/8 tsp salt (.5 mL)
- 1/3 cup water (75 mL)
- 2 egg whites
- 1 1/2 tsp vanilla extract (7 mL)
- Hand-held electric mixer
Instructions

In the top of a double boiler or a heatproof bowl, using hand-held electric mixer, whip sugar, cream of tartar, salt, water and egg whites on high speed for 1 minute. Place over saucepan of boiling water over medium heat, being sure that boiling water does not touch bottom of top pan. Beat on high speed until very light and fluffy, for 7 minutes. Beat in vanilla. Let cool.

Beat 3 oz (90 g) unsweetened chocolate, melted and cooled, with vanilla.
