Seven-Minute Frosting

This frosting was made famous in the 1950's.  With the revolution new electric mixers, wit would only take seven minutes of mixing to create a perfect light frosting.

Ingredients

  • 1 1/2 cups granulated sugar (375 mL)
  • 1/4 tsp cream of tartar (1 mL)
  • 1/8 tsp salt (.5 mL)
  • 1/3 cup water (75 mL)
  • 2 egg whites
  • 1 1/2 tsp vanilla extract (7 mL)
  • Hand-held electric mixer

Instructions

  1. In the top of a double boiler or a heatproof bowl, using hand-held electric mixer, whip sugar, cream of tartar, salt, water and egg whites on high speed for 1 minute. Place over saucepan of boiling water over medium heat, being sure that boiling water does not touch bottom of top pan. Beat on high speed until very light and fluffy, for 7 minutes. Beat in vanilla. Let cool.

  3. Beat 3 oz (90 g) unsweetened chocolate, melted and cooled, with vanilla.
