Onion Rice

Sautéed onions added to rice makes a perfect side dish for beef.

  • 1 cup long-grain white rice
  • 2¼ cups chicken, beef, or vegetable broth
  • ¼ teaspoon salt
  • 2 tablespoons butter
  • ½ cup chopped yellow onion
  • ¼ cup chopped fresh parsley


  1. In a medium saucepan over medium-high heat, combine rice, broth, and salt and bring to a boil. Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, about 20 minutes. Remove from heat.

  2. In a small skillet over medium heat, melt butter. Add onion and sauté until tender, about 5 minutes. Stir into rice. Add parsley and fluff with a fork before serving.
