Noodle Pudding

This dish makes a fabulous main course for brunch or even an informal supper. You can also serve it with roast turkey or chicken. This recipe makes a lot, so if you’re not feeding a crowd make it in two dishes and freeze one.

Can be made ahead? Yes. Can be assembled up to 6 hours ahead and cooked according to the directions. Or it can be fully cooked ahead and served either at room temperature or reheated. Reheat, covered with foil, in a 350°F. oven for 20 minutes.

Can be frozen? Yes. Cool completely beforehand. Partially defrost at room temperature, cover with foil, and bake for 30 minutes in a 350°F. oven. Test by inserting a small, sharp knife into the center. If it comes out hot, it’s done.

Can be doubled? Yes. Use two baking dishes.

Good for leftovers? Wonderful, either cold or reheated in a conventional oven or in the microwave.

Ingredients

  • 1 pound wide egg noodles, cooked 2 minutes less than the package directions call for, drained
  • 4 eggs
  • ½ cup sugar
  • 2 teaspoons baking powder
  • ½ cup sour cream
  • 1 cup cottage cheese
  • ½ cup apricot preserves
  • 1 teaspoon vanilla
  • 1 stick (4 ounces) sweet butter, melted
  • 1 cup golden raisins

Instructions

  1. Preheat the oven to 350°F. with the rack in the center position. Generously butter a 13 × 9-inch ovenproof casserole.

  2. With a whisk, egg beater, or electric mixer beat the eggs and sugar until the mixture is thick and pale yellow in color. Add the baking powder, taking care that it is well mixed in. Mix in the sour cream, cottage cheese, preserves, and vanilla. Stir in the melted butter.

  3. Mix the egg mixture, the noodles, and the raisins together in a large bowl. Pour in the prepared pan and bake for 1 hour, or until the top is golden. Cut into squares and serve hot.
