Mango Ginger Coulis

Sometimes the best sauces are the simplest ones. Here, mangos and ginger combine to make an elegant addition to fruity scoops of ice cream.

A coulis is a thick sauce or purée. The fruity ones are great to dab on dessert plates or to drizzle over tarts and pies. Keep them in plastic bottles with a small nozzle for easy squeezing.

Ingredients
- 2 cups (500 mL) chopped peeled mango
- ½ cup (125 mL) crystallized ginger
- Juice of 1 lime

In a food processor or blender, purée mango, ginger and lime juice until smooth.
