Lemon Chocolate Chip Cookies

The combination of citrus and chocolate is usually expressed in the marriage of orange and chocolate. Lemon works equally well and it is a delightful surprise.

Ingredients
- 10 tablespoons butter
- ½ cup sugar
- ½ teaspoon grated lemon rind
- 1 tablespoon lemon juice
- 1 egg
- 1 cup flour
- ¼ teaspoon salt
- ¾ cup semi-sweet chocolate morsels
Instructions

Preheat oven to 375 degrees

Prepare 2 cookie sheets. Beat the butter, sugar, and lemon rind until light and creamy. Stir in the lemon juice and egg. Combine the flour and salt and fold into the butter mixture. Add the chocolate morsels and chill for an hour.

Drop from a teaspoon onto the cookie sheets. Bake for 12 minutes, until the cookies have a deep golden edge. Cool on a cookie rack.

When you think of chocolate chip cookies, you never think of using lemon in the mix at all. I think that this is a refreshing take on the classic cookie recipe. I love that it is out of the norm for baking. I can't wait to try them and see what my kids think of the flavor too.
