Adjust the consistency of this lemmony hummus by adding water or additional lemon juice. Use it thick as a dip for fresh vegetables or pita, but thin it with a few tablespoons of liquid for use as a sauce over falafel.

- 2 cups cooked garbanzos (chick-peas; pages 19-21), drained
- 3 garlic cloves, minced
- ¼ cup sesame seed paste (tahini)
- 6 tablespoons freshly squeezed lemon juice
- ¼ cup freshly minced parsley
- Pinch of salt
In a food processor or blender, combine the garbanzos, garlic, sesame paste, lemon juice, parsley, and salt. Process until smooth.
Taste and adjust seasoning.
