Ingredients

  • 2 cups cooked garbanzos (chick-peas; pages 19-21), drained
  • 3 garlic cloves, minced
  • ¼ cup sesame seed paste (tahini)
  • 6 tablespoons freshly squeezed lemon juice
  • ¼ cup freshly minced parsley
  • Pinch of salt

Instructions

  1. In a food processor or blender, combine the garbanzos, garlic, sesame paste, lemon juice, parsley, and salt. Process until smooth.

  2. Taste and adjust seasoning.
