Ingredients
- One 9-inch unbaked pastry pie crust
- 3 cups green tomatoes, thinly sliced
- 3 tablespoons flour
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/4 cup sugar
- 3 tablespoons lemon juice
- 1 tablespoon white vinegar
- 1 tablespoon butter

Preheat oven to 425°F. Place tomato slices on paper towels. In a large bowl, mix together the flour, salt, cinnamon, and sugar. Add tomatoes, lemon juice, and vinegar. Spoon mixture into pie crust. Dot with butter and cover with top crust. Bake at 425°F for 10 minutes. Reduce temperature to 350°F and continue baking for 30 minutes.
