Grapefruit and Champagne Sherbet

NotesWhenever possible, make homemade sherbet close to serving time.  If the sherbet becomes too hard, place it in the refrigerator for 45 minutes to soften up before serving.

In fact, fresh sherbet that has been frozen in the ice cream maker to restore a smooth sherbet consistency. This process may be done only once.

  • 2 cups fresh grapefruit juice, strained and chilled
  • 1 cup Champagne, chilled
  • ½ cup Simple Syrup, chilled
  • ½ cup pomegranate seeds
  • Ice cream maker


  1. In a bowl, mix the grapefruit juice, Champagne, and simple syrup. Place in an ice cream freezer and chill according to the manufacturer’s directions.

  2. When the sherbet is frozen, remove, cover, and place in freezer. When ready to serve, sprinkle with the pomegranate seeds.

This was easy to make and refreshing, although you don't really taste the Champagne very much.
