Curried Chicken Salad with Apples and Currants

When I started making this with my kids, I added just a little curry powder and balanced it with the sweetness of the apples. Cut back on the curry powder if you don’t think it will go over in your house. Once your kids develop a taste for curry, they will love this.
NotesCall the kids:
• Measure the mayonnaise
• Peel the apple with a hand-held peeler
• Measure the currants or raisins
• Pull the parsley leaves from the stems
• Mix the mayonnaise and curry powder
• Add the remaining ingredients to the mayonnaise mixture

Ingredients
- 2/3 cup Fresh Mayonnaise, or store-bought
- 1 tablespoon curry powder, or to taste
- 4 cups cooked chicken breast, cubed (about 1¼ pounds)
- ½ Granny Smith apple, peeled, cored, and sliced
- ½ cup diced white onion (about ½ medium onion)
- ¼ cup currants or raisins
- ¼ cup chopped fresh flat-leaf parsley leaves
- 1 tablespoon fresh lemon juice
- ½ teaspoon salt
- ¼ teaspoon cracked black pepper
Instructions

In a medium bowl, combine the mayonnaise and the curry powder. Add the chicken, apple, onion, currants, parsley, lemon juice, salt, and pepper and toss gently.
