Blue Cheese Mayonnaise
This flavored mayonnaise is a wonderful addition to panini, especially beef panini. The blue cheese gives an extra bite to almost any ingredient lineup.
Store in an airtight container in the refrigerator for up to 1 week.
Be careful not to overmix after adding the blue cheese, or you will end up with a mayonnaise that has a blue tint. Not very appetizing.

- ½ cup (125 ml) mayonnaise
- ¼ cup (50 ml) plain yogurt
- 2 tsp (10 ml) freshly squeezed lemon juice
- 2 oz (60 g) blue cheese, crumbled
- ¼ tsp salt (1 ml) (or to taste)
In a bowl, combine mayonnaise, yogurt and lemon juice. Carefully fold in blue cheese. Season to taste with salt. Cover and refrigerate until chilled, about 20 minutes.
