Balsamic Vinaigrette Dressing

Spices such as oregano and dried basil may be used to create variations of this dressing. When working to emulate a vinaigrette recipe you have tasted, the proportions typically are one part vinegar to two parts oil. Adjust to your palate as needed.

Balsamic vinegar is made from the Italian white Trebbiano grape and is aged in barrels to give it a dark color and pungent sweetness. For a delicious and colorful salad, balsamic vinegar can be used drizzled over mozzarella and tomatoes and sprinkled with fresh chopped basil and olive oil.

Ingredients

  • 1/3 cup balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon sugar
  • ½ teaspoon cracked black pepper, or more to taste
  • ¼ teaspoon salt
  • 1 large garlic clove, minced or pressed
  • 2/3 cup extra virgin olive oil
  • Whisk

Instructions

  1. Whisk together the first 6 ingredients. While continuing to whisk, add the oil in a thin stream to thicken. Adjust the seasonings as needed. Make ahead and refrigerate.
