- 1/4 cup flavorful olive oil
- 2 teaspoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 3 medium-size carrots, peeled, halved, and parboiled
- 1 large zucchini, cut into 6 pieces
- 1 patty pan squash, cut into 6 pieces
- 2 medium-size red bell peppers, each cut into 3 pieces
- 6 large fresh mushrooms
- 6 scallions, cut in half

In a large bowl, beat together the olive oil, lemon juice, garlic, salt, and pepper. Add the vegetables to the oil mixture and toss them until well coated.
To serve, heat the coals in the grill or preheat the indoor broiler. Arrange the vegetables on 6 skewers. Brush them generously with the oil mixture and grill them until they are well browned at the edges, about 3 minutes on each side. Serve hot.
