  • 1/4 cup flavorful olive oil
  • 2 teaspoons freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper
  • 3 medium-size carrots, peeled, halved, and parboiled
  • 1 large zucchini, cut into 6 pieces
  • 1 patty pan squash, cut into 6 pieces
  • 2 medium-size red bell peppers, each cut into 3 pieces
  • 6 large fresh mushrooms
  • 6 scallions, cut in half


  1. In a large bowl, beat together the olive oil, lemon juice, garlic, salt, and pepper. Add the vegetables to the oil mixture and toss them until well coated.

  2. To serve, heat the coals in the grill or preheat the indoor broiler. Arrange the vegetables on 6 skewers. Brush them generously with the oil mixture and grill them until they are well browned at the edges, about 3 minutes on each side. Serve hot.

You cannot go wrong with grilled veggies! These came out so fresh, flavorful, and delicious. The mushrooms were my favorite!

I'm not a huge vegetable fan, but I really enjoyed these! I agree with the commenter below regarding the onions. While they tasted delicious, they were a challenge to keep on the skewer. Thanks for the simple (and tasty) recipe!

Delicious! Perfect for my last BBQ gathering. Only thing I'd do different is maybe switch out the scallions for a different type of onion. You basically have to weave the scallions between all the other veggies so it doesn't fall into the grill.
