  • 4 small zucchini, washed and halved lengthwise
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper
  • 1/3 cup freshly grated Parmesan cheese
  • 2 garlic cloves, minced

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Arrange the zucchini, cut sides up, in an ovenproof dish large enough to hold them in a single layer. Lightly brush with the olive oil. Season with the salt and pepper. Mix the Parmesan and garlic together, then sprinkle over the zucchini.

  2. Bake for about 15 minutes, or until the zucchini are tender and the cheese is browned.

My family loves zucchini and I have not found a recipe to prepare it that they do not like. This will be a great addition to the recipe rounds. Not that zucchini is complicated to prepare, this is an easy recipe that almost prepares itself.

This is such a satisfying dinner when I want something a little lighter, but still cheesy and tasty.

This is a way easier recipe than I've been doing, which is quartering them and grilling them. Doing it that way creates an uneven angle, making it more of a chore to season the zucchini. With summer here, I'll have to try this new way!

Ok, here is a recipe that I enjoyed making, eating, and even cleaning up! My produce coop selected zucchini last week, lots of zucchini so I have tried several zucchini recipes from this website. Thanks! I made a couple of changes. I cut the zucchini into rounds so they were bite size. I didn't have fresh garlic so I used garlic powder. I added some red chili flakes too. They were fantastic and went fast! I am starting another batch! Any other variations that someone's tried?
