Couscous with Vegetables

Editor's Note: Couscous, a staple of North African cuisine, is wonderful to serve with a spicy meal. It is a wonderful alternative to rice when serving it with chicken or fish. Rice can start getting repetitive, so it is nice to try out some worthy substitutes. This slow cooker couscous with vegetables recipe includes chicken stock, silver almonds, and mixed vegetables. It is incredibly fast to make. You need practically no prep time to make this easy slow cooker recipe. This recipe is great to make on a weeknight when time is of the essence. Easy slow cooker couscous with vegetables is also wonderful to make as a filling for peppers. You fill the peppers up with the couscous then you bake them.

  • 2 cups (500 mL) chicken stock
  • ¾ cup (175 mL) frozen mixed vegetables
  • 1¼ cups (300 mL) couscous
  • ¼ cup (50 mL) slivered almonds, toasted


  1. In a medium saucepan over high heat, bring stock to a boil. Add vegetables. Cook for 3 minutes. Add couscous and stir.

  2. Remove from heat. Cover and let stand for 5 minutes or until liquid is absorbed. Fluff with a fork and stir in almonds.
