Editor's Note: Every home cook should have a collard greens recipe up their sleeves! This recipe for the delicious side dish, a favorite of the South, is easy to make. In this four-ingredient recipe, a ham hock and collard greens combine to form a side dish that is tasty as can be. Although the ingredients must simmer for two hours, don't despair; that is plenty of time to get caught up on household chores. This collard greens recipe can be served with any of your favorite Southern recipes for a truly delightful meal the entire family will love.

  • 3 pounds collard greens, stalks removed
  • Ham hock with reserved ham skin
  • 1 tablespoon sugar
  • Salt and freshly milled pepper


  1. Wash, drain, and chop the greens, set aside. 

  2. Place the ham hock and skin in a large kettle, and add about 3 quarts cold water to cover. Bring to a boil over high heat. Simmer over moderate heat for 30 minutes. Add the greens and sugar and simmer for 2 hours. 

  3. Drain the “likker” and serve it with the greens and spooned over corn bread.
