Editor's Note: Rice is a super easy side dish for practically any meal, but sometimes it's nice to elevate easy recipes. Calico (Wild and Brown) Rice is a simple yet satisfying side dish to serve with chicken, beef, vegetables, and more. The combination of brown and wild rice makes this a hearty dish with great texture, and it's a great source of whole grains. To make this rice pilaf recipe, wild and brown rices are combined with chicken stock. The rice cooks until tender before being combined with parsley, salt, and pepper.

  • 3 1/2 cups chicken stock or canned broth
  • 3 ounces (1/2 cup) wild rice, picked over, rinsed in cold water, and drained
  • 1 cup long grain brown rice
  • 1/4 cup minced fresh parsley
  • Salt and freshly ground black pepper, to taste


  1. Bring the broth to a boil in a saucepan over high heat. Add the wild rice and brown rice, stir, cover, reduce the heat to low, and cook until the wild rice grains open and the brown rice is tender (45 to 50 minutes).

  2. Remove from the heat and let stand for 5 minutes with a linen towel between the pot and the lid.

  3. Season with parsley, salt, and pepper.
