Ginger Paste

Editor's Note: If you've only purchased pre-made ginger paste at the grocery store, then you will be in for a surprise when you make this recipe! The one-ingredient paste takes just a few minutes to prepare, but will be ready to use in a number of your favorite recipes, including the author's recipe for Chicken Tikka. Having a container of just-made ginger paste will result in a fresh taste you will appreciate. Plan accordingly when making this paste, as it can only be kept for up to one week.

- 7-inch (18-cm) piece fresh ginger, peeled and roughly chopped

Put the ginger in a food processor. Add 3 tablespoons water and process to a smooth paste.
