Rich Vanilla Buttercream Icing
Editor's Note: Sweet vanilla icing will be the capping off a perfect dessert for a party or special occasion with friends. Homemade icing makes any dessert taste magnificent. This delicious recipe can be used to top off your favorite cupcake recipe or one of your many cake recipes. The icing is not only wonderful to ice the entire outside of the cake, but is also purposed to help sandwich cake layers together and serve as a delicious filling for any of your cake creations. Everybody needs a standby icing recipe for the many types of desserts they make and this one will hold up time and time again.
This simple recipe can be used to ice cupcakes and to sandwich cake layers together.

- 8 tbsp butter, at room temperature
- 3 tbsp whole milk, as needed
- 1 tsp pure vanilla extract
- 3½ cups confectioners sugar
Beat the butter, 2 tbsp milk, and the vanilla in a large bowl with an electric mixer until smooth.
With the mixer on low speed, gradually add the confectioner's sugar, beating until the frosting is spreadable. If the frosting is too stiff, add the remaining milk.
The icing can be refrigerated in a covered container for 2 days. Bring to room temperature before using. If too stiff to spread, stir in a little extra milk.
