Editor's Note: If you're looking to serve a dessert that is perfect for summer, then you'll want to see this recipe for Blackberry Raspberry Crumb Pie! This recipe uses two types of berries, resulting in a dessert that is equal parts sweet and tart. You'll love that this blackberry and raspberry crumb pie is elegant enough to serve at a dinner party, but wouldn't be out of place at a picnic or potluck, either. If you'd like to make this pie recipe even more decadent, then serve a scoop of ice cream or a dollop of vanilla Greek yogurt with each slice.

I like to use a combo of berries in pies, as the flavors really play well off each other. This is a very tasty duo, especially with freshly picked berries.

Ingredients

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. On a lightly floured surface, roll out dough into a circle large enough to fit pie plate, dusting work surface and dough as necessary to keep the dough from sticking (or roll between 2 pieces of waxed or parchment paper). Press dough into prepared pie plate, crimping edge. Place pie plate in freezer or refrigerator for 15 to 20 minutes to chill while you prepare the filling.

  3. Filling: In a large bowl, gently combine raspberries, blackberries, sugar, cornstarch, lemon juice and cinnamon, making sure that cornstarch is not lumpy. Transfer filling to prepared bottom crust. Place pie plate on baking sheet and bake in preheated oven for 45 minutes.

  4. Remove from oven, reduce temperature to 350 degrees F (180 degrees C) and sprinkle streusel over pie, avoiding juicy edge. Return pie to oven and continue baking for 15 minutes more or until nicely browned and juices are bubbling and thickened around edge. If pie starts to get too brown before it’s finished baking, cover loosely with a piece of tented foil. Let cool on a wire rack for 1 to 2 hours before serving.

Notes

If your berries are pretty tart, you can increase the sugar in the recipe by up to ¼ cup (50 mL).

You can also use frozen (unthawed) berries for this pie, but the cold berries might need an additional 15 minutes or longer in Step 3 for the pie to bake.

If using a frozen store-bought pastry crust for this recipe, make sure to keep it frozen until you’re ready to fill and bake it.
