I like to make my mini quiches with a hash brown crust because it makes quiche a sturdier to-go breakfast dish. Perfect for those mornings when you don’t have time to sit down and eat.

Ingredients
- Hash Brown Crust
- 2 1/2 cups (450 g) hash browns, thawed and squeezed of excess moisture
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon Seasoned Salt (page 191)
- 1/4 teaspoon coarsely ground pepper
- Filling
- 6 large eggs
- 1 cup (240 ml) milk
- 1/2 teaspoon garlic powder
- 1/4 teaspoon Seasoned Salt (page 191)
- 1/4 teaspoon coarsely ground pepper
- 1 cup (230 g) diced ham
- 1 cup (230 g) finely chopped broccoli
- 1 cup (120 g) shredded Cheddar cheese
- 2 green onions, thinly sliced
Instructions

To make the hash brown crust, preheat the oven to 400°F (204°C). Grease 12 muffin cups.

In a medium bowl, mix the hash browns with the onion powder, garlic powder, Seasoned Salt and pepper. Press the hash browns into the muffin cups. Bake for 12 minutes, or until the hash browns begin to brown. Remove the hash browns from the oven and set aside. Do not turn off the oven.

To make the filling, add the eggs to a medium bowl. Use a fork or egg beater and beat them until they are a pale yellow color. Add the milk, garlic powder, Seasoned Salt and pepper. Use a fork or whisk to mix well. Add the ham, broccoli, cheddar and green onions to the eggs. Stir well to combine. Divide the quiche filling between the hash brown cups. Bake for 15 minutes, or until the mini quiches are cooked through.
Storing and Reheating
Cover the mini quiches and store in the refrigerator for up to 3 days.
To freeze, wrap each mini quiche individually and freeze for up to a month.
To reheat a thawed mini quiche, unwrap it, place it on a microwave-safe plate and microwave on high for 30 to 45 seconds.
To reheat a frozen mini quiche, unwrap it, place it on a microwave-safe plate and microwave at 50 percent power for 2 minutes.
