Elderflower and Passion Fruit Cooler

Ingredients
- Elderflower cordial
- Soda water
- 3-4 passion fruit (strained if preferred)
- Ice cubes
- Sprigs fresh mint

In a large glass pitcher, pour about one-third elderflower cordial to two-thirds soda water. Add the pulp and seeds of the passion fruit (or strain them if you prefer this seed-less) and then chunk up with ice cubes, adding a few sprigs of fresh mint if you have any on hand.
