  • For the Cupcakes:
  • 2 cups flour
  • 2/3 cup cocoa
  • 1 ¼ tsp baking soda
  • 1 ¼ tsp baking powder
  • 3 large eggs
  • 1 2/3 cups sugar
  • 1 tsp vanilla
  • 1 cup mayonnaise
  • 1 1/3 cup cold water
  • For the Frosting:
  • 2 (8 ounce) packages softened cream cheese
  • 1/2 cup butter
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • Red food coloring



  1. Preheat the oven to 350 degrees.

  2. Line cupcake pans.

  3. On a piece of wax paper, mix flour, cocoa, baking soda, and baking powder.

  4. In a mixing bowl, beat eggs, sugar, and vanilla for 3 minutes. Blend in mayonnaise. Stir in flour mixture and cold water. Mix for 2 minutes.

  5. Fill muffins tins and bake approx. 25 minutes. Makes 36 cupcakes.


  1. Mix cream cheese and butter until creamy.

  2. Add in vanilla and powdered sugar.

  3. Tint frosting pink using a few drops of red food coloring.

  4. Decorate with sprinkles, mini tiaras, and candy eyes.
