Ingredients
- Crust Ingredients
- One 9-ounce box chocolate wafers, finely crushed
- Scant 1/4 cup sugar
- 3 tablespoons unsalted butter, melted
- Filling Ingredients
- Three 8-ounce packages cream cheese, at room temperature
- 1 cup sugar
- 1 tablespoon all-purpose flour
- 2 teaspoons vanilla extract
- 1/8 teaspoon salt
- 3 eggs
- 1 cup sour cream
- One 12-ounce package semi-sweet chocolate chips, melted and cooled slightly
- Whipped cream, for garnish
- Chocolate shavings, for garnish

To Make the Crust: Combine the wafer crumbs with the sugar and butter. Press into the bottom and 1/2 inch up the sides of a 9-inch springform pan.

Preheat the oven to 350 degrees F.

To Make the Filling: Beat the cream cheese until smooth with an electric mixer at high speed. While the mixer is running, very gradually add the sugar. Mix in the flour, vanilla, and salt; then add the eggs, one at a time, beating well after each addition. Mix in the sour cream, then the chocolate.

Pour the batter into the prepared pan an bake on the center rack of the oven for 1 hour. Remove and let cool on a wire rack. The center of the cheesecake will be soft when removed from the oven and will firm up as it cools.

For an attractive presentation, garnish with whipped cream and shaved chocolate.

Cheesecake is usually much too rich for me, but somehow this wasn't as sweet or rich as other recipes I've tried, which is great. Yet the chocolate flavor was still perfectly chocolatey, which I also loved!

I agree with other commenters that this cheesecake is not overbearingly sweet, which is a huge plus. It's incredibly delicious, but pretty rich, so just a sliver is enough!

This is so good! It's very creamy and has the cream cheese taste that I love, and it's perfectly chocolaty. It's not overbearing or too sweet. Love it!

I really dig this cheesecake. It's chocolately and sweet, but it's not cloyingly so. Perfect for any time of year!

If you like chocolate, then you'll love this chocolate cheesecake. Perhaps next time I'd try an Oreo crust. I bet that would taste delicious!
