Ingredients
- 2 cups all-purpose flour
- 3/4 cup firmly packed light brown sugar
- 4 tablespoons (1/2 stick) unsalted butter, melted, or vegetable oil
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 1 egg
- 1 cup milk
Instructions
-
Preheat the oven to 375 degrees F. Lightly grease a 9-inch square baking pan.
-
In a medium-size bowl, stir together the flour, brown sugar, and melted butter or vegetable oil until crumbs form. Remove 1/2 cup and set aside.
-
Stir the baking powder, cinnamon, and salt into the remaining crumb mixture. Add the egg and milk and stir until just combined. Spoon the batter into the greased pan and top with the reserved crumbs.
-
Bake until a cake tester inserted into the center comes out clean, 25 to 30 minutes. Remove to a wire rack and let stand at least 15 minutes before cutting. Cut into squares and serve warm.

This coffee cake is one I'd definitely eat again! I loved the cinnamon sugar crumble on the top-- it was the cherry on top. And an easy recipe too!

The coffee cake was good, but almost a little bit dry. I had to follow it with a drink of water after each bite; it was still really good though.

Cinnamon is one of my favorite spices so I was all over this coffee cake when it was in our kitchen at work - so much so I wanted the recipe! Even though coffee cake is usually associated with breakfast, this was the perfect afternoon snack!
