Date Nut Loaf from Van de Kamps

Ingredients
- 4 oz pitted dates, chopped fine
- 1 cup water
- 1 cup packed brown sugar
- 1/4 cup unsalted butter, melted
- 1 large egg, beaten
- 1/2 tsp salt
- 1 tsp real vanilla extract
- 1/2 cup walnut pieces
- 1 1/3 cup all purpose flour
- 1/2 tsp baking powder
Instructions

Preheat oven to 325 degrees F.

In a saucepan on medium heat, combine dates and water together, bring to a boil. Remove from the heat and use a hand blender to puree the mixture.

Return to low heat and add brown sugar and butter. Stir until sugar melts. Remove from heat.

Temper the beaten egg with some of the warm mixture, then whisk in egg to the rest of the mixture being careful not to overheat and scramble the egg. Add the salt and walnut pieces.

In a bowl, whisk flour and baking powder together, into warm mixture. By hand mix only until the batter is smooth.

Pour into a 8-inch by 4-inch loaf pan, sprayed with a non-stick spray. Place in preheated oven and bake until a toothpick inserted into the center comes out clean, about 50 to 60 minutes. Remove from the oven and cover immediately and tightly with aluminum foil for at least one hour before slicing. This bread is great slathered in butter while still warm.
