Claude's Cake Mix
This is my allergen-free version of “cake flour.” The addition of the cornstarch sirnply makes my regular flour blend lighter and therefore better suited to some cake recipes. Make sure to store this in an airtight container in a cool, dry place and whisk it very well before using it.

- 4½ cups Betsy’s Baking Mix
- ¾ cup cornstarch
Pour the baking mix into a large container that has an airtight lid. Whisk in the cornstarch until well combined and no white spots remain.
Store the mixture in the airtight container for up to 3 months, making sure to whisk it before each use.
