Editor's Note: Every tailgating event or watch party needs excellent snacks! Instead of opening a bag of chips and serving pre-made dip at your next get-together with friends, show off your cooking skills with this recipe for Portable Nachos. Cheesy and delicious, this game day recipe has a few components that can be made in advance of your next party. This nacho recipe can be adjusted so that you can make it as spicy or as mild as you and your friends prefer. The use of yellow and blue corn tortilla chips will make this recipe even more colorful! If you really want to show off your fandom for your favorite team, then use tortilla chips in your team's colors.

  • One 8-ounce bag yellow corn tortilla chips
  • One 8-ounce bag blue tortilla chips
  • Tomato Salsa Ingredients
  • 2 large ripe tomatoes, chopped (about 2 1/2 cups)
  • 1/4 cup finely chopped scallions
  • One-half 4-ounce can chopped green chilies (mild or hot), drained
  • 1 clove garlic, minced
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 2 to 4 drops Tabasco
  • Cheese Sauce Ingredients
  • 1/2 cup milk
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups (6 ounces) shredded jalapeño Monterrey Jack cheese
  • 1 1/2 cups (6 ounces) shredded mild cheddar cheese


  1. To Make Tomato Salsa: Several hours before serving, combine all the ingredients in a plastic container and refrigerate until ready to use.

  2. To Make Cheese Sauce: Just before ready to serve or pack for tailgate, combine the milk and flour in a 1-quart saucepan. Bring the mixture to a boil over medium heat, stirring constantly until smooth. When the mixture has thickened, stir in the cheeses and continue cooking just until the cheeses are melted and the mixture is smooth.

  3. Serve cheese sauce and salsa with chips.

I'm usually not the biggest fan of nachos, but these were actually really good in my opinion! I hate the fake orange cheese that usually smothers nachos, so I was pleasantly surprised that this cheese tasted real and nice & gooey. Plus the fresh toppings are a bonus.

These weren't the best nachos I have every had, but they definitely hit the spot and satisfied by craving!
