Chopped Guacamole

This is the quintessential, unadorned guacamole, it only has three ingredients because that is all that it needs. I actually prefer this over the guacamole taquero and I can easily eat tacos with just corn tortillas and chopped guacamole. I like using a coarse, flaky sea salt with this recipe because it lends a nice taxture to the guacamole and since salt is such a predominant flavor, you can taste the minerals int he salt. If you want a spicy version of this recipe, add a minced serrano to the finished dish.

- 2 avocados
- Juice of 2 limes
- 1/2 teaspoon coarse salt or 1/3 teaspoon fine salt

Pit the avocados and scoop out of the fiesh. Give the avocado a few chops one way and then the other, then slide it into your serving bowl.

Add the lime juice and toss to coat the avocado. Sprinkle on the salt and give the avocado a few more gentle tosses.
