Carole Bloom is a cookbook author, food writer, cooking teacher, media chef, and spokesperson. A European-trained pastry chef, she is best known for her expertise in chocolate.
She is the author of nine cookbooks, with a tenth due out in the fall of 2010 called Intensely Chocolate: 100 Tantalizing Recipes for the Ultimate in Chocolate Flavor. Her other books are: Bite-Size Desserts; The Essential Baker: The Comprehensive Guide to Baking with Chocolate, Fruit, Nuts, Spices, and Other Ingredients; Truffles, Candies, and Confections: Recipes and Techniques for Candymaking; Chocolate Lover’s Cookbook for Dummies; Cookies for Dummies; All About Chocolate: The Ultimate Resource for the World’s Favorite Food; The International Dictionary of Desserts, Pastries, and Confections; Sugar and Spice; and The Candy Cookbook.
Carole contributed to the candy-making chapter for the revised and updated Joy of Cooking and her book, All About Chocolate, was the winner of Best Chocolate Book 1999 at Eurochocolate.
She contributes to a number of national magazines and other publications, including Bon Appétit, Fine Cooking, Food & Wine, Gourmet, Eating Well, Cooking Light, Sam's Club Source, Culinate.com, Epicurious.com, and amillioncooks.com.
Carole has demonstrated recipes and cooking techniques and been interviewed on a number of television shows including the Today Show, ABC World News This Morning, CNN, Better Homes and Gardens Television, and Seasonings on PBS. She often participates in Chef’s Holidays in Yosemite, California
She has been the national spokesperson for the American Boxed Chocolate Manufacturers Group and the Chocolate Manufacturers Association. She also was a celebrity judge and spokesperson for Sam's Club (Wal-Mart Stores).
She is a Certified Culinary Professional, a designation awarded by the International Association of Culinary Professionals (IACP). She is a founding member and past president of Les Dames d’Escoffier, San Diego Chapter, and is a founding member of the San Diego Baker’s Dozen.
