Some of the best recipes for popular dishes are ones that contain an element of surprise. The Well-Filled Guacamole is such a dish. No tomatoes. No onions. Instead tomatillos and lime juice. After one bite you’ll join the praising chorus.
1. Halve the avocados and remove the pits. Use a spoon to scoop out the pulp and place it in a bowl.
2. Remove the husks from the tomatillos. Rinse the tomatillos; chop them fine. Add to the avocado, along with the lime juice and salt. Mash with a fork until the avocado is mostly smooth with a few lumps here and there. Use right away or store as described in Chopped Avocado.
Any of the variations described for Chopped Avocado is equally delicious for this special guacamole.
