Recipe

A good winter dessert when fresh fruit supplies are limited.

Yield: Makes 4 servings
Prep time: 10 Mins
Cooking time: 5–10 Mins

Ingredients

  • 2 tbsp butter
  • 6 pitted dried plums, chopped
  • 6 dried apricots, chopped
  • 2 large apples, peeled, cored, and chopped
  • 1 firm ripe pear, peeled, cored, and chopped
  • 1 cinnamon stick
  • 2 tsp sugar
  • 2 tsp lemon juice
  • Yogurt or honey, to serve

Directions

1. Melt the butter in a heavy saucepan over medium heat. Add the fruit and cinnamon stick. Cook gently, stirring often, until the fruit has completely softened.

2. Stir in the sugar and heat for a couple of minutes, or until the sugar has dissolved.

3. Remove the pan from the heat, and stir in the lemon juice. Serve warm with a spoonful of yogurt or a drizzle of honey.

Notes

Prepare ahead: The compote can be made several days in advance, cooled, covered, and refrigerated.
