Yield : Makes 1 cup

Ingredients

  • 1/3 cup red wine vinegar
  • 1 teaspoon Dijon-style mustard
  • Salt and freshly milled black pepper to taste
  • 2/3 cup olive oil

Directions

In a small bowl, whisk together the vinegar, mustard, and seasonings.

In a steady stream, gradually whisk in the oil until the mixture thickens and emulsifies.
