Recipe
Lean, mild ground turkey makes a delicious loaf if it is well-seasoned. This version, topped with a colorful cranberry sauce for flavor and color is a timely loaf to serve during the holidays. Bake sweet potatoes alongside for an easy weeknight dinner.
Yield :
Serves 4
Ingredients
- 1½ pounds ground turkey
- ¼ cup finely chopped yellow onion
- ½ cup peeled and grated carrot
- ¼ cup finely chopped celery
- 1 cup coarse dried bread crumbs
- ½ cup chicken broth
- ½ teaspoon dried sage
- ½ teaspoon poultry seasoning
- 1 large egg, lightly beaten
- ½ teaspoon salt
- ¼ teaspoon freshly ground pepper
- 1 cup homemade or canned cranberry sauce, slightly drained, at room temperature
- Fresh sage leaves for garnish
Directions
In a large bowl, combine all the ingredients except the cranberry sauce and sage leaves and mix well. Turn the mixture into a lightly sprayed or oiled 9-by-5-inch loaf pan and gently pat down. Bake until the loaf is firm and the top is lightly browned, about 1 hour. Spread the cranberry sauce on top of the loaf and let stand in the pan for 5 to 10 minutes before serving. Remove the loaf from the pan and transfer to a platter. Garnish with sage leaves
