Sugar-Free Apple Spread
This spicy spread bakes to a caramelized golden hue and is superb on whole-grain pancakes, potato pancakes, and waffles. Various apple varieties will lend different flavors, varying from sweet to tart so wait and add a touch of spice at the end of cooking. Tree-ripened Granny Smiths from a garden or open-air market lend an ideal sweet-tart ratio.

- 2 pounds apples, such as Granny Smith, Golden Delicious, Winesap, or Pippin, peeled and cored
- One 6-ounce can apple juice concentrate, thawed
- Ground cinnamon or mace
Preheat the oven to 300°F. Purèe the apples in a food processor with the apple juice concentrate. Place in a glass or non-aluminum baking dish and bake for 1 hour, stirring 2 or 3 times, or until reduced by half and golden brown, Season to taste with cinnamon or mace. Spoon into hot sterilized jars and seal. Let cool and refrigerate for up to 1 week (or freeze for up to 3 months).
