Makes 24 cookies
Ingredients
- ½ cup raw turbinado sugar
- 2 large eggs
- 1 cup pure applesauce
- 1 teaspoon vanilla
- 1 ½ cups whole-wheat flour
- 2 cups steel-cut oats
- ½ teaspoon salt
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 2 teaspoons cinnamon
- 1 cup walnut halves, toasted (optional) and coarsely chopped
- 1 cup dried cranberries (Craisins) or raisins
- Coconut oil for greasing cookie sheet
Directions
Preheat the oven to 375°F. Mix the applesauce, eggs, vanilla and sugar together in a large bowl. Add the dry ingredients, nuts and dried cranberries. Use a small amount of the coconut oil to grease the cookie sheet. Drop cookies by tablespoons onto sheet. Bake approximately 15 to 20 minutes. Cool and store in airtight container.

These freeze well.
