Recipe
Every restaurant has its own version of spicy mayonnaise sauce. Sriracha, the Vietnamese red chile sauce, seems to be the most popular chile sauce used for this American signature sushi sauce. You can also use plain toban jiang, Chinese chile bean sauce, or Italian red chile flakes.

Makes ¼ cup
Ingredients
- ¼ cup mayonnaise
- 2 tablespoons to ¼ cup Sriracha (Vietnamese chile sauce) or 2 tablespoons toban jiang (Chinese chile bean sauce)
Directions
Put the mayonnaise and Sriracha in a cup and stir with a spoon to mix. Store the sauce in a clean lidded jar in the refrigerator.
