I liked the taste of this very much, and the big chunks of squash made a nice presentation, but I found that the squash roasted unevenly. I cut it smaller and cooked it much longer (though at 375 degrees F) than the directions specified and then reheated it in a slow oven. I would make it again, though. You could also add some cooked chard or spinach to add a bit of color.
