Recipe
This dressing is particularly good on spinach and red onion salad or any combination of greens.
Yield :
½ cup (enough for 1 4-serving salad)

5 minutes
Ingredients
- 3 tablespoons freshly squeezed lime juice (1 or 2 limes)
- 1 tablespoon honey, preferably desert blossom
- 1 tablespoon coarsely chopped fresh cilantro
- ½ fresh jalapeno, minced
- Pinch of salt (optional)
Directions
Combine the lime juice, honey, cilantro, and jalapeño. Whisk until well blended (see Notes).
Taste and adjust the seasonings, adding salt, if needed.
Notes
If you have a mini-chopper, use it to mince the jalapeño and combine all the ingredients.
