Cherry tomatoes are such fun to pop in your mouth. This easy and light salad gets a jolt of flavor from fresh basil, and it’s the perfect partner for heavier dishes such as cream-based pasta dishes and hearty casseroles.

Make it a meal kit: Make the salad and store in a sealable container or plastic bag for up to 2 days in the refrigerator.

Have it your way: You may use any variety and combination of tomatoes for this salad, including diced beefsteak, plum (Roma), yellow, or heirloom.

  • 2 cups halved cherry or grape tomatoes
  • 2 cups halved yellow cherry tomatoes
  • ¼ cup chopped fresh basil
  • 1 tablespoon red wine vinegar
  • 2 teaspoons olive oil
  • Salt and coarsely ground black pepper to taste

Instructions

In a medium bowl, combine the tomatoes, basil, vinegar, and oil, tossing to mix. Season with salt and pepper.
