Made this for just 4 people, so I halved the recipe. Even though I didn't read the recipe thoroughly (I didn't refrigerate overnight) it still turned out wonderful. Roasted 2 heads of garlic with olive oil, kosher salt, pepper and a lot of fresh thyme. The house smelled fabulous as the garlic roasted. Just the right amount of paste for the 2 tenderloins. Although I did roast for 20 minutes as directed, and rested for about 15 minutes, the center was still too rare for us. Never-the-less, it was an amazing flavor especially with the shallot sauce. The sauce doesn't make much, it's more for drizzling than smothering. Definitely will be making this again only next time, I'll refergerate overnight and increase the cooking time by about 10 minutes. Highly recommend. This is one of those types of recipes that once you get it down - you'll look like a star and there really is minimal effort involved.
