Lime Scallops

Simplicity itself—and you can either grill or broil these zesty skewered scallops. Be sure to let them marinate for at least a couple of hours to develop flavor. The recipe comes from Eileen Weinberg of Good and Plenty to Go in Manhattan.

Ingredients

  • 2 pounds sea scallops
  • ½ cup fresh lime juice
  • 3 tablespoons olive oil
  • Dash of salt and pepper to taste
  • 2 limes, in wedges, for skewering
  • Garnish: 2 tablespoons chopped cilantro

Instructions

Mix the scallops, lime juice, oil, and seasonings together in a glass bowl and let marinate for at least 2 hours.

When you’re ready to cook, thread the lime wedges and scallops on skewers—1 lime wedge, then 3 scallops, etc.

Cook under the broiler or over a charcoal grill for 5 or 6 minutes, turning once.

Serve the skewers sprinkled with the cilantro.

Seems like marinating for at least two hours in lime juice would really cook them ( like ceviche) and an additional broil for 6-7 minutes would produce scallops like rubber erasers
