Leek greens need not be discarded; they make an excellent broth.
- Greens from 4 pounds of leeks
- 6 cups broth or water
When washed, cut into 2-inch pieces and put in a stockpot. Add liquid. Bring to a boil. Cover; reduce the heat and simmer for 3 hours. Strain.
