Recipe
Eaten with a traditional breakfast such as Ackee and Salt Fish, these cakes, originally called “Journey Cakes,” are served with meat and seafood on many Caribbean islands.
Yield :
Makes 6 to 8 cakes (4 to 6 servings)
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 tablespoons butter
- ¼ cup water, approximately
- 1 cup vegetable oil
Directions
1. In a large bowl, sift together the flour, baking powder and salt. Using your fingertips, rub in the butter. Add just enough water to achieve a stiff, smooth dough. Shape the cakes into 2-inch-wide discs.
2. Heat the oil in a large skillet over high heat until it is very hot. Fry the cakes in the hot oil until they are brown on both sides, 5 to 7 minutes.
