Recipe
Yield :
Serves 2 to 3
Ingredients
- ½ cup white or yellow cornmeal
- ½ cup all-purpose flour
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon sugar
- 1 egg beaten
- About ¼ cup milk
- 1 jalapeno pepper, finely chopped
- 4 scallions, including some of the green, finely chopped
- 1/8 teaspoon cayenne pepper
- Vegetable oil, for frying
Directions
Sift the dry ingredients into a mixing bowl. Add the beaten egg and enough of the milk to make a light paste. Add the jalapeno pepper, scallions, and cayenne and blend thoroughly.
In a large heavy deep pot, heat at least 2 inches of the oil until it begins to smoke. Drop the batter by the tablespoonfuls into the hot fat and fry until golden.
