My favorite part of the Passover meal is the matzo, spread with haroset and horseradish. This recipe for haroset comes from my friend Tamara, who possesses a wealth of Georgian Jewish recipes.
- 1 sweet red apple, cored, peeled, and cut into pieces
- 1 pear, cored, peeled, and cut into pieces
- ½ cup walnut pieces
- ½ cup blanched almonds
- ½ cup hazelnuts, toasted and skinned
- ½ cup raisins
- ½ cup pitted dates
- 1/3 cup sweet kosher wine
- 1½ tablespoons honey
Working in batches, if necessary, mince all the ingredients in a food processor. Transfer to a bowl.
