Serve with cold poached salmon, Dublin Bay prawns, and other fish and shellfish.
- 1 cup /240 ml mayonnaise, preferably homemade
- 1 bunch watercress, trimmed and finely chopped
- 6 to 8 chives, snipped into small pieces
Put 2 tbsp of the mayonnaise into the bowl of a food processor and add the watercress and chives. Pulse several times to obtain a rough puree.
Put the remaining mayonnaise in a small bowl, then mix the watercress mixture in well.
